Nothing says fall like pumpkin, and this muffin is one of the healthiest ways to start your day with a kickstart of soluble fiber. It is sugar-free, gluten-free, and dairy-free. You can add dark chocolate chips or maple syrup if you’d like a touch of sweetness.

Ingredients

  • 1 egg
  • 1/4 cup pumpkin
  • 3 tbsp ground flax
  • 1 tbsp Florasophy
  • 3/4 tsp baking powder
  • 1/2 tsp oil
  • Dash of salt
  • Dash of cinnamon

Instructions

  1. Whisk all the ingredients together in a mug.
  2. Cook for 90 seconds in the microwave. Cut in half and top with your favorite nut butter.
